It may not feel like spring out there but this recipe will remind you that summer is close! An easy muffin recipe with strawberries folded in and topped with cinnamon and sugar before baking. Delicious, and easy.
- ½ cup butter or margarine, softened
- ¾ cup sugar
- 1 egg
- 2 cups flour
- 2 tsps baking powder
- ½ tsp salt
- ½ cup milk
- ½ tsp vanilla
- 1½ cups chopped strawberries
- 3 tsps sugar
- ½ tsp cinnamon
- Preheat oven to 400 degrees.
- Cream butter and sugar in a large bowl.
- Add egg and mix well.
- Mix flour, baking powder, and salt in a small bowl.
- Next, alternately add the flour mixture and milk to butter mixture in the large bowl.
- Add vanilla, then gently fold in the strawberries
- Spoon batter into muffin pans (this makes a dozen muffins).
- Combine sugar and cinnamon and sprinkle over muffins. You will have a lot of sugar, but this allows you to be as generous as you like.
- Bake at 400º for 20 minutes.
The batter will seem really thick - no worries though, it's supposed to be!
These look delicious! I love berry season 🙂
I have never had cinnamon and strawberries together. Can’t wait to try this!
Ohhhh I will be making these this weekend for sure!!
These look AMAZING! I just bought a HUGE container of strawberries today, and I think I’ve just discovered what to do with them. Pinning right now! Thanks for the awesome recipe.
Made these this morning! Delicious and super easy. Now to stop myelf from eating the whole batch in a day 😉
Those look absolutely delicious! Thanks for sharing the recipe.
Oh yum, your muffins look so delicious!
These look so good, thanks
These look perfect for summer breakfasts! I recently tried a great carrot pecan muffin recipe, so I’ve been on a muffin kick.
I’ve added this page to my StumbleUpon. 🙂
They look delicious!! Must try them!!
They look sooo good
I just made these and they are great! I changed the recipe a tiny bit by adding a mashed banana and reducing the milk slightly (due to the banana addition). YUM! So good! Thanks for sharing this great recipe!
Oh, love the addition of banana, I bet they taste delicious!
Made these this morning. Perfection!
Great to hear!
Just found these on pinterest and made them today because I had stopped by a strawberry stand and had strawberries coming out of my ears! I needed a quick and easy recipe to use some of them up. This fit the bill. And ohmygosh – it was amazing! The happy/content sounds coming out of my kids and husband while they were eating these was hilarious!
Yay! So good to hear! We don’t even have strawberry stands until August here! I wonder how these freeze?
Made these the other day and they sure didn’t last long around the house. I think I want to try it in a bundt pan next time…and perhaps spread it with cool whip?? mmm =)
I just made these to take to work and they are delicious! Mine aren’t as crusty at the top, they are rounded over like most muffins, but it doesn’t change the taste! I agree they would be good with banana or maybe pecans or walnuts.
These are delicious. I tried a Nigella Lawson recipe for strawberry muffins & this one is by far superior. Thanks so much for sharing! Next time, I might try a little whole wheat flour.
These look delicious. I want to make them for the kids!
So I made these beauties with gluten free flour and they are delish!
A great way to use up our local strawberries, my kids would love these!
Even though I only make these a few times a year, it’s definitely my favourite muffin recipe! Whenever we have a few extra strawberries, or a few that are starting to go soft, I make these. LOVE!
