Easy Summer Recipe: Corn Salsa

Corn Salsa - mix tomatoes, red onion, jalapeno, cilantro, corn, lime juice!What’s your go-to dish?  You know the one you bring to BBQ’s or pot-lucks because you know how to make it without a recipe, have made it so many times that it’s effortless and you’ve found several ways to cut down your prep time too?  Corn Salsa is my go-to dish.  It’s easy to make and goes great with tortilla chips.

Tip: set aside a bit for the next night’s dinner – it makes a delicious topping on grilled chicken!

Corn Salsa
 
Ingredients
  • ½ can corn
  • 4 medium tomatoes (I like on the vine best), diced
  • ½ red onion, diced
  • ¼ cup cilantro
  • ½ jalapeno pepper, diced
  • Juice of ½ lime
  • Dash of salt
Instructions
  1. Combine ingredients and refrigerate 1-2 hours before serving for flavors to blend.

The beauty of salsa is that you can add as little or as much as your favorite ingredient as you like – so extra cilantro is always yummy, or adding some diced green peppers for an added element of flavor – it’s up to you!

Serve with tortilla chips for dipping – I like Tostitos Scoops or Old Dutch Sea Salt & Hint of Lime Rounds.

I know using a food processor may be faster, but I like dicing the tomatoes, red onions and jalapeno by hand. In fact, the only ingredient already prepped in this recipe is the corn from a can – though I hear roasted corn on the cob is amazing in salsa and I’ve been meaning to do this.  If you make this for your next gathering, let me know what your guests thought (and if there was anything left in the bowl!)
