It may not feel like spring out there but this recipe will remind you that summer is close! An easy muffin recipe with strawberries folded in and topped with cinnamon and sugar before baking. Delicious, and easy.
Strawberry Muffins

Ingredients
- ½ cup butter or margarine, softened
- ¾ cup sugar
- 1 egg
- 2 cups flour
- 2 tsps baking powder
- ½ tsp salt
- ½ cup milk
- ½ tsp vanilla
- 1½ cups chopped strawberries
- 3 tsps sugar
- ½ tsp cinnamon
Instructions
- Preheat oven to 400 degrees.
- Cream butter and sugar in a large bowl.
- Add egg and mix well.
- Mix flour, baking powder, and salt in a small bowl.
- Next, alternately add the flour mixture and milk to butter mixture in the large bowl.
- Add vanilla, then gently fold in the strawberries
- Spoon batter into muffin pans (this makes a dozen muffins).
- Combine sugar and cinnamon and sprinkle over muffins. You will have a lot of sugar, but this allows you to be as generous as you like.
- Bake at 400º for 20 minutes.
Notes
The batter will seem really thick - no worries though, it's supposed to be!

I just made these and they are great! I changed the recipe a tiny bit by adding a mashed banana and reducing the milk slightly (due to the banana addition). YUM! So good! Thanks for sharing this great recipe!

Just found these on pinterest and made them today because I had stopped by a strawberry stand and had strawberries coming out of my ears! I needed a quick and easy recipe to use some of them up. This fit the bill. And ohmygosh – it was amazing! The happy/content sounds coming out of my kids and husband while they were eating these was hilarious!

Made these the other day and they sure didn’t last long around the house. I think I want to try it in a bundt pan next time…and perhaps spread it with cool whip?? mmm =)
I just made these to take to work and they are delicious! Mine aren’t as crusty at the top, they are rounded over like most muffins, but it doesn’t change the taste! I agree they would be good with banana or maybe pecans or walnuts.
