I love thai food, almost as much as I love cilantro and a delicious peanutty sauce. So, combining all three things in this ridiculously easy slow cooker meal makes it a winner! Use a spicier salsa for more flavor kick and play with your side dishes to see what your family likes best (we used basmati rice, a current favorite in our household!)
Slow Cooker Thai Chicken
Ingredients
- 8-10 skinless chicken thighs
- 1 cup salsa (mild is too bland, use medium or spicy depending on your family)
- ½ cup peanut butter
- 2 Tbsp soy sauce
- 2 Tbsp lime juice
- 1 Tbsp grated ginger
- cilantro and peanuts for topping
Instructions
- Place chicken at the bottom of the slow cooker and top with remaining ingredients.
- Turn chicken once to coat, close lid, set on low and walk away for 6-8 hours.
- Top with cilantro and peanuts before serving.
The peanut butter scares me a bit in this dish as I’m not much of P.B. fan, but the spice tempts me to try it!
Love spicy Thai food but I don’t eat chicken so time for the mushrooms to be used instead
