Baked Macaroni and Cheese Recipe

Cooler weather makes most of us crave comfort food, and this is an easy to prepare dish that answers that call! If you like a little more zing, use old cheddar cheese and add paprika. We like this very basic version adapted from All Recipes, though I do use a Mexican blend of shredded cheese for more flavour. The best part, it makes great school-lunch leftovers in a thermos too!

Baked Macaroni and Cheese Recipe
Ingredients
  • 1 Tablespoon salt
  • 2½ cups Elbow Macaroni
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 4 cups milk
  • ½ teaspoon salt
  • 2 cups shredded cheese (cheddar, old cheddar or Mexican blend)
  • ¼ cup butter, melted
  • 1 sleeve cheese crackers, crushed (if buying by the box, about 1½ cups crushed)
Instructions
  1. Preheat oven to 350 degrees F
  2. Fill a large pot with water. add 1 Tablespoon of salt and bring to a boil.
  3. Stir in the macaroni and cook uncovered for 8 minutes (you want it firm).
  4. Drain macaroni and set aside.
  5. In a separate large pot, combine ¼ cup of butter, and flour over medium to low heat until a thick paste is created.
  6. Slowly add all the milk to the flour paste mixture, ¼ cup at a time stirring well.
  7. Add salt and cheese and stir until cheese has melted and sauce has thickened.
  8. Pour noodles into the cheese mixture, stir to combine and then pour the entire mixture into a 9×13 casserole dish.
  9. Mix the melted butter & crushed cheddar crackers together. Sprinkle on top of Macaroni.
  10. Bake uncovered in oven for 45 minutes until top is golden.
