My kids devour banana bread, it’s my 5 year old’s favorite, and yet I don’t make it nearly often enough, as evidenced by this tweet earlier this week:
When I make a quick batch of banana bread or banana muffins my kids think I’m a hero and I shake my head at how easy it is.ย I should really do it weekly (putting bananas in the freezer instead of tossing them out would help in that endevour!)ย So here’s my super-easy banana bread or muffin recipe.ย The pan I use to get the square little loafs above is the Brownie Pan from Pampered Chef.
Easy Banana Muffins
Prep time:
Cook time:
Total time:
Serves: 12+
Ingredients
- 1 cup brown sugar
- ¼ cup butter
- 1 egg
- 3 bananas
- 1½ cups flour
- ½ tsp baking powder
- 1 tsp baking soda
- chocolate chips (if desired...who doesn't desire chocolate?!)
Instructions
- Mix together brown sugar and butter.
- Add the remaining ingredients except chocolate chips and mix on low with hand mixer until well blended.
- Add chocolate chips - I don't measure this but I'd say ⅓ cup is about right.
- Bake in preheated oven at 325F for 15 minutes.
Sounds yummy. Yes we will make banana bread sometimes and we all enjoy it. I have to agree that it is something we should also make more as we buy banana’s weekly and when they start to brown I could be making the banana bread but I also like to make smoothies with the banana’s.
Thanks for this recipe – sounds scrumptious!
Do you not need milk in the recipe?
Nope!
I really, really need to make some banana bread. This recipe sounds great and much easier than mine, so thanks. My freezer door looks like a mountain of brown-skinned bananas. My hubby thinks it looks gross and bugs me weekly to toss them. I always have the promise of baking in the back of my mind but just don’t seem to get to it. Maybe this week I will.
Is 15min the cook time for muffins and loaf?
Muffins only.
Just finished making a double batch of the banana muffins. I used peanut butter chips instead of chocolate and topped them with a little brown sugar. Absolutely fabulous. This will be my go-to recipe when those black scary things start piling up in my freezer..lol.. Thanks so much Tenille.
looks awesome
Sounds delicious and i love the smaller loaves
I do keep all of my brown bananas but I have a huge bag full lol. I never make banana bread and I should do it more often as the whole household loves it!
Love Banana Bread, thanks for the recipe!
I love banana bread!
This is definitely a recipe I would make! We always have banana’s around.
Looks so easy to make and something my very picky eating daughter would actually enjoy eating. Would be great to put in her school lunches.
I freeze bananas, too. They are perfect for baking with.
I have some brown bananas in the freezer that are just screaming to be incorporated in this recipe. Thanks a bunch :)!
I’m going to try making this with coconut oil, stevia and rice flour! Wish me luck! They are perfect for work or school lunches!
Banana bread is a favourite staple in our house. Its great for lunches, snacks and occasionally breakfast too!
Those banana bread mini loafs are so adorable.
Love banana bread and am always on the hunt for a new, delicious recipe. Thanks!
Ok yum, now I have a craving for banana bread, and seeing as my daughter smushed all the new bananas I bought, well we very well won’t eat them so I might as well bake a banana bread!
I make a similar recipe for banana cake and yes chocolate chips are a must. I do have to say, the mini loaves are adorable. I will have to try and find these mini bake pans.
This sounds yummy! Will have to try it next time.
This looks pretty good. Too bad I am not a banana fan! ๐
I’ve got bananas in the freezer; I guess it’s time to make banana bread!
I just made tons of banana breads and muffins this weekend for company, and yes chocolate a must, I like that when they (bananas) get too ripe I just throw them in freezer for the next time I make it.
I’m going to have to try this, looks like less ingredients than my recipe. My 4 yo asks every week to make it. I love the mini loaf pans. My trick with the bananas is to mash them then freeze them, then you aren’t trying to get them out of the skin frozen – yuck
I like that this recipe is pretty low on the butter and sugar, but it still looks delicious!
These sound great! My kids are both big fans of banana bread so I’m definitely going to have to try out this recipe. Thanks for sharing!
My children love banana bread! I like that your recipe uses a small amount of sugar.
We will be making this. My kids love banana bread and my wife is always looking for new banana bread recipe to try.

Love banana bread! So easy to pack up and not messy at all!! I’ve got a couple if recipes that I Love. One with buttermilk, and the other with plain yogurt.

I have that same brownie pan! This is a great idea for making use of it, thanks. (you are right, if I made this it has a decent chance of being actually eaten in a school lunch)
looks yummy!
If you ever get to look in my mom’s freezer, don’t pass up the opportunity: dozens of black bananas like she had some kind of ape lab experiment that failed and didn’t want to chuck the Chiquitas afterwards.
This recipe sounds yummy and a great way to use up ripe bananas in my house!
haha I love your tweet, I can so relate. I have been putting the brown bananas in the freezer
I bake banana bread sometimes, Sara love it…if it has chocolate chips in it! I have a recipe that uses less fat and sugar. This one looks delicious, thank you ๐
Amazing and quick recipe! My kids go bananas over this cake. Thanks for sharing! I will defo make this for them.

Thanks for sharing this.
Love banana bread. Can’t wait to make it. I have ripe bananas waiting to be turned into something as wonderful as this
Just made it in my perfect brownie pan! Love it. Baked for 25/30 mins.
Looks delicious. I never used brown sugar in a banana bread before. I bet it will be delicious.
Yummy. I would add some chocolate too ๐
We LOVE banana bread, cake and muffins here. Bananas NEVER hit the garbage can ๐ I take them out of the peels and freeze them in ziplocks so I don’t have to peel them later when they are defrosted and mushy!
YUM! I happen to have some bananas at home that would make a lovely banana bread. Can’t wait to try this recipe!
I love making banana bread, and you weren’t kidding when you called it an easy recipe! It sounds like a great recipe on its own or as a ‘base’, with many possible optional add-ins like blueberries, or spices, etc.
I have a number of bananas in the freezer (I just throw them in the freezer whole with peel. When it is time to use them I place them in the sink to defrost for 1/2 hour) so I’ll give this recipe a whirl.
Love banana bread. It is a pretty quick and easy thing to make. It’s filling, and yummy, and almost seems like a special treat because of the sweetness to it. the chocolate chips in your recipe certainly make it extra appealing to the kids – nice addition.
This look really good and not too hard to make! Banana bread is so yummy for me, I’ll definitely try this
Yumyumyum black skinned bananas make the most flavourful bread!
This looks like a really good recipe. I like the suggestion of adding chocolate chips…… I’ll definitely do that! ๐
We make Banana Bread all the time but have never made it with brown sugar. I like your recipe so next time we’ll be using yours because it really is an easy quick one!
Banana Bread is one of the things in our house that gets eaten up right away. These little loaves are perfect for their lunchboxes and your recipe is easy just the way I like recipes to be.

Sounds delicious! And easy โกโก shared on Facebook so I can try it later ๐
Is the butter supposed to be melted or just room temperature?
I made these today and accidentally melted my butter and they still came out delicious. Not sure if it’s meant to be melted but I’ve done both and turned out great both times.
