Easy Banana Muffins

Banana MuffinsMy kids devour banana bread, it’s my 5 year old’s favorite, and yet I don’t make it nearly often enough, as evidenced by this tweet earlier this week:

When I make a quick batch of banana bread or banana muffins my kids think I’m a hero and I shake my head at how easy it is.ย  I should really do it weekly (putting bananas in the freezer instead of tossing them out would help in that endevour!)ย  So here’s my super-easy banana bread or muffin recipe.ย  The pan I use to get the square little loafs above is the Brownie Pan from Pampered Chef.

Easy Banana Muffins

Ingredients
  • 1 cup brown sugar
  • ¼ cup butter
  • 1 egg
  • 3 bananas
  • 1½ cups flour
  • ½ tsp baking powder
  • 1 tsp baking soda
  • chocolate chips (if desired...who doesn't desire chocolate?!)
Instructions
  1. Mix together brown sugar and butter.
  2. Add the remaining ingredients except chocolate chips and mix on low with hand mixer until well blended.
  3. Add chocolate chips - I don't measure this but I'd say ⅓ cup is about right.
  4. Bake in preheated oven at 325F for 15 minutes.

  • Sounds yummy. Yes we will make banana bread sometimes and we all enjoy it. I have to agree that it is something we should also make more as we buy banana’s weekly and when they start to brown I could be making the banana bread but I also like to make smoothies with the banana’s.

  • I really, really need to make some banana bread. This recipe sounds great and much easier than mine, so thanks. My freezer door looks like a mountain of brown-skinned bananas. My hubby thinks it looks gross and bugs me weekly to toss them. I always have the promise of baking in the back of my mind but just don’t seem to get to it. Maybe this week I will.

  • Just finished making a double batch of the banana muffins. I used peanut butter chips instead of chocolate and topped them with a little brown sugar. Absolutely fabulous. This will be my go-to recipe when those black scary things start piling up in my freezer..lol.. Thanks so much Tenille.

  • If you ever get to look in my mom’s freezer, don’t pass up the opportunity: dozens of black bananas like she had some kind of ape lab experiment that failed and didn’t want to chuck the Chiquitas afterwards.

  • We LOVE banana bread, cake and muffins here. Bananas NEVER hit the garbage can ๐Ÿ˜‰ I take them out of the peels and freeze them in ziplocks so I don’t have to peel them later when they are defrosted and mushy!

  • I love making banana bread, and you weren’t kidding when you called it an easy recipe! It sounds like a great recipe on its own or as a ‘base’, with many possible optional add-ins like blueberries, or spices, etc.

  • I have a number of bananas in the freezer (I just throw them in the freezer whole with peel. When it is time to use them I place them in the sink to defrost for 1/2 hour) so I’ll give this recipe a whirl.
