M&M Cookies

M&M Cookies

What does one do with a gift basket filled with M&M’s?  Find creative ways to incorporate them into recipes, of course!  Here’s a recipe for soft-baked cookies with M&M’s added in for extra chocolatey goodness!  Some call these monster cookies, but because I didn’t add anything more to them to make them monstrous, I’ll just stick with M&M Cookies.

Serves: 2 dozen cookies
 
Ingredients
  • ½ cup margarine
  • ½ cup brown sugar
  • ¼ cup sugar
  • ¾ cup peanut butter (I use Wow Butter peanut butter substitute)
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • 1 and ¼ cups flour
  • ½ cup quick oats
  • 2 packages plain M&M's
Instructions
  1. Preheat oven to 350F degrees.
  2. In a large bowl, cream the butter and sugars together on medium speed until blended.
  3. Mix in the peanut butter, egg, and vanilla.
  4. Next, mix in the baking soda and flour. Do not overmix.
  5. Fold in the quick oats, then the M&M's.
  6. Drop onto baking sheet in 1 tbsp balls (I use a fabulous medium melon ball scoop!)
  7. Bake for exactly 9 minutes and remove from oven promptly. Use the back of a spoon to flatten a bit, then leave on the cookie sheet to cool for about 10m before transferring to a cooling rack.
  8. Cookies will appear almost under-baked, but giving them that extra 10m on the cookie sheet to set will complete them. Cookie to room temp, "You complete me!" 😉
