Breakfast Egg Muffins

I was going to title this anytime egg muffins instead, because these tasty snacks are not just a breakfast stand-in and actually make great after-school snacks as well!

These are ridiculously easy to make, and you can customize them to each kid’s (or adult’s) taste. We use turkey bacon, and my kids don’t love peppers so I load mine up and make theirs without. They like extra cheese, I sneak in spinach when I can. So, take this recipe with a grain of salt (and add some when needed!)

Ingredients

  • 4 eggs
  • 1 cup milk
  • ½ cup chopped spinach
  • ¼ cup diced red pepper
  • ¼ cup diced mushrooms
  • 1 tbsp diced onion
  • 1 cup shredded cheddar cheese
  • 4 slices cooked turkey bacon, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325F
  2. Whisk milk and eggs in a bowl until well blended
  3. Stir in remaining ingredients
  4. Pour into 12 non-stick muffin cups (I spray mine with cooking spray)
  5. Bake 40 minutes
