Creamy Buffalo Chicken Dip

A deliciously creamy appetizer dip that will be your go-to for potlucks!

Creamy Buffalo Chicken Dip has become a family favorite over the years in our household and easily my go-to for pot-lucks and casual get-togethers with friends, no matter the season. In the summer months, you can lighten up this creamy dip with vegetables like celery, cucumbers and carrots for dipping and in the cooler comfort-food months you can certainly serve with tortilla chips or bread for dipping.

Creamy Buffalo Chicken Dip
 
Ingredients
  • 2 chicken breasts, cooked and shredded (our method is to boil them for about 30m and then shred, but you can also bake it in the oven in a baking dish with enough water to cover)
  • 1 block cream cheese (250g/8oz)
  • ½ cup ranch dressing
  • ½ cup blue cheese dressing
  • ½ cup Frank's Red Hot Sauce
  • 1 cup shredded cheese (cheddar, marble, we like shredded habanaro for an extra kick!)
Instructions
  1. Once your chicken is shredded, combine it with the remaining ingredients in a large bowl and mix well, breaking up as much of the cream cheese as you can.
  2. Transfer mixture into a baking dish.
  3. Pop in the oven at 350 degrees for 20-30 minutes.
  4. Top with green onions or chives.
  5. Serve with tortilla chips, crackers, bread, or veggies like celery, cucumbers, carrots and peppers.
Notes
This recipe also freezes well (I freeze mine in freezer bags, laying them flat in my freezer for easy storage.)
