Easy, Versatile, and Healthy – Eggs! #EggcentricTV

As an Egg-bassador for Canadian Eggs (I get all the fancy titles!) I have shared some of my family’s favorite egg recipes on the app. I recently shared that my video for Egg Muffins is on the app (look for it under the How Do You Like Your Eggs? category).

Eggs are so versatile they go from breakfast favorite to comfort-food cookies, it all depends on your two c’s – creativity and craving!

 

This is a great recipe because it’s super-easy and also it’s a step above your basic chocolate chip cookie. In fact, you can also add chocolate chips to this recipe! My kids love these cookies, and they’re perfect for school lunches as well because they’re nut-free.

Cranberry Oatmeal Cookies
 
Ingredients
  • 1 cup butter, softened (I used margarine)
  • 1 cup packed light brown sugar
  • ½ cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1¼ cups all-purpose flour
  • ½ tsp baking soda
  • 1 tsp salt
  • 3 cups quick-cooking oats
  • 1 cup dried cranberries
Instructions
  1. Preheat oven to 325 degrees
  2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth.
  3. Beat the eggs in one at a time and then add in vanilla.
  4. Combine the flour, baking soda and salt then stir into the creamed mixture until just blended.
  5. Mix in the quick oats and finally the cranberries!
  6. Drop by heaping spoonfuls onto ungreased baking sheets.
  7. Bake for 12 minutes and allow cookies to cool on baking sheet for 5 mins or so before transferring to a wire cooling rack.
