Introducing Eggcentric TV

How many recipes do you have as a screenshot on your phone? That’s been my method to save interesting ideas I find online, but when dinner is an hour away and I forgot to make a plan (more days than I’d like to admit), those recipes among my 2000 photos aren’t much help.

I found a brand new (just launched!) app that I’m thrilled to be a part of! Egg Farmers of Canada have found a very creative and on-point method to share their product (yummy, wholesome and nutritious eggs!) with the masses, along with tips and tricks, recipe ideas and more. Eggcentric TV is a free app available at iTunes, ROKU and coming soon to Android!

The Eggcentric TV app is full of recipes, categorized by breakfast, lunch and dinner and desserts making it ridiculously easy to find a recipe to meet your needs when you’re busy and short on time. Plus, there’s a ton of tips on cooking with eggs including a video I found for 1-Minute Hollandaise! See? I told you, it’s ridiculously easy to find great recipes at Eggcentric TV!

I am an egg-bassador (heh.) and am happy to share my family’s favorite eggciting recipes incorporating fresh, healthy eggs on the Eggcentric TV App. You can watch my video above sharing one of our favorite recipes for Healthy Egg Muffins, or you can download the Eggcentric TV App and find me there!

I love this recipe because it’s super easy to prepare (especially if, as I mentioned in the video, you can cut up all your veggies ahead of time), is crazy healthy because not only does it feature fresh Canadian eggs (1 egg has 6 grams of high quality protein and 14 essential nutrients like iron and vitamin A!) but also a ton of vegetables and an additional meat protein.

Healthy Egg Muffins
 
Ingredients
  • 4 eggs
  • 1 cup milk
  • ½ cup chopped spinach
  • ¼ cup diced red pepper
  • ¼ cup diced mushrooms
  • 1 tbsp diced onion
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, chopped
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 325F
  2. Whisk milk and eggs in a bowl until well blended
  3. Stir in remaining ingredients
  4. Pour into 12 non-stick muffin cups (I spray mine with cooking spray)
  5. Bake 40 minutes

    • Yes, exactly! I use what I have on hand. I also cheat sometimes and buy the precut omlette mix from the grocery store and toss that in. Easy!

  • These look super yummy. I’m trying to eat more eggs, but go through phases where I’m put off by the texture (no matter how they’re cooked). This looks sufficiently well-disguised that I could eat them for breakfast quite happily. And I’ll bet they freeze well.

    • Definitely – you can incorporate more eggs into your diet even if you need to be sneaky with yourself! Let me know if you try them!

  • I will share this with my daughter for the daycare,the kids would love this and it can be prepared in advance. Getting some extra veggies in them is always a win. My favorite add to eggs are the sweet peppers and bacon,so made for each other!

I feel like I’m always going to the grocery store, and sometimes without a plan or a plan that’s wayyyyy too elaborate for a regular dinner!   • I love this idea, I have recipe’s all over the place and we love to try different egg recipe’s.

  • My son has special needs with particular food issues, eggs being one of them. He would never eat them until I made egg muffins for him. I used sausage, diced tomato & some cheese in them. He loves sausage so to get to it he had to eat the eggs & now he LOVES egg muffins with no negativity. Next I will have to try adding in some of your ingredients like spinach & mushrooms!
