Easy Cheesy Chicken Quesadillas are a kid’s favorite – the kids like that they can specify what they do and don’t want in their own quesadilla and I like that they get a bunch of veggies and calcium from ALL. THAT. CHEESE.
Have I mentioned how much I love our slow cooker? This recipe for Crock Pot Chicken Tacos is so ridiculously easy. You can purchase pico de gallo and guacaomole but it’s always better when you make your own (and it’s easy too, promise!)
If you want to switch things up a bit, consider using ground chicken in this Chicken Taco Salad recipe. Leftovers are also delicious the next day if you portion everything in separate containers for lunch kits!
