Crock Pot Chicken Tacos

This is one of our favorite recipes!  It’s ridiculously easy to make but truly,  I think it’s all about the toppings, and without them the recipe just wouldn’t be the same!  So, I’m including the basic recipe for Crock Pot Chicken Tacos but also how to quickly whip up an awesome guacamole and pico de gallo!

Crock Pot Chicken Tacos

Ingredients
  • 4 chicken breasts
  • 1 package taco seasoning mix
  • 1 large jar salsa (650ml, 22oz)
  • 3 ripe avocaodos
  • ½ cup sour cream
  • 3 tbsp Epicure Guacamole Seasoning (or guacamole seasoning of your choice)
  • 1 lime
  • 4 tomatoes-on-the-vine
  • ½ small red onion
  • ½ jalapeno
  • 1 handful of cilantro (I never measure, so I'd say "to taste" which is a handful for me)
  • 1 box taco shells (I like the stand and stuff ones for ease with the kids)
  • lettuce, cheese, salsa, sour cream and other taco toppings of your choice
Instructions
  1. Place chicken breasts in slow cooker, top with jar of salsa and taco seasoning. Mix in the seasoning into the salsa, close lid and walk away. Cook 4-6 hours on high or 8 hours on low.
  2. Guacamole - Mash 3 ripe avocados (I use a hand blender), add ½ cup sour cream and guacamole seasoning. Cut lime in half and squeeze the juice from half a lime into the mixture. Cover and refrigerate for at least one hour.
  3. Pico de Gallo - Dice tomatoes, red onion, jalapeno and cilantro. Squeeze the juice from the remaining half lime into the mixture, add salt to taste and refrigerate for at least one hour.
  4. About 30m before serving, shred the chicken with a fork. Cover and let sit.
  5. Serve chicken tacos with lettuce, cheese, guacamole and pico de gallo! Enjoy and watch the kids devour!
Notes
To balance the spice with the kids - use a mild salsa and taco seasoning and top with spicy shredded cheese or add Frank's hot sauce to your own serving.
