Gluten Free Cheddar and Chive Biscuits

coconut flour biscuitsI love making biscuits, but I love eating them more! If biscuits are a staple on your table on weekends, for BBQ get togethers or just for a quick snack during the week, consider this recipe for gluten-free cheddar and chive biscuits made using coconut flour.

Why gluten-free? If your family doesn’t have to watch for gluten, it can sometimes be troublesome to figure out what to make for a dinner guest or play date visitor, as was the case for me last year when one of my son’s friends was being tested for gluten-sensitivity. Understanding how the impact of food intolerance or allergies can impact a child (I’ve dealt with food allergies with my daughter), I wanted to make sure this little guy was always eating gluten-free food in our household too.  So, having a product like coconut flour in my pantry just makes sense for situations like that.

Gluten Free Cheddar and Chive Biscuits

Ingredients
  • ⅓ cup coconut flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp garlic powder
  • Pinch salt
  • ¼ cup coconut oil, melted
  • 4 eggs, beaten
  • 1 cup shredded aged cheddar cheese
  • ¼ cup finely chopped fresh chives
Instructions
  1. Preheat oven to 350F.
  2. Stir coconut flour with baking powder, baking soda, garlic powder, and salt until combined. Whisk in melted coconut oil and eggs until well combined. Stir in cheddar and chives.
  3. Drop eight portions of batter onto a parchment-lined baking sheet.
  4. Bake for 15 to 20 minutes or until golden brown on the bottom.
  5. Cool for at least 10 minutes before serving.
