I love making biscuits, but I love eating them more! If biscuits are a staple on your table on weekends, for BBQ get togethers or just for a quick snack during the week, consider this recipe for gluten-free cheddar and chive biscuits made using coconut flour.
Why gluten-free? If your family doesn’t have to watch for gluten, it can sometimes be troublesome to figure out what to make for a dinner guest or play date visitor, as was the case for me last year when one of my son’s friends was being tested for gluten-sensitivity. Understanding how the impact of food intolerance or allergies can impact a child (I’ve dealt with food allergies with my daughter), I wanted to make sure this little guy was always eating gluten-free food in our household too. So, having a product like coconut flour in my pantry just makes sense for situations like that.
- ⅓ cup coconut flour
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp garlic powder
- Pinch salt
- ¼ cup coconut oil, melted
- 4 eggs, beaten
- 1 cup shredded aged cheddar cheese
- ¼ cup finely chopped fresh chives
- Preheat oven to 350F.
- Stir coconut flour with baking powder, baking soda, garlic powder, and salt until combined. Whisk in melted coconut oil and eggs until well combined. Stir in cheddar and chives.
- Drop eight portions of batter onto a parchment-lined baking sheet.
- Bake for 15 to 20 minutes or until golden brown on the bottom.
- Cool for at least 10 minutes before serving.
