Finally, I can use my chili powder in my pantry for something other than…well, chili. I’ve seen this recipe floating across my Facebook timeline a few times and figured it sounded tasty enough to try. I also used my own measurements since the recipe I kept seeing didn’t have any (odd?)
Here’s what I used – next time, I’m going to try lime juice instead. It was tangy and sour and delicious and you can certainly add more chili powder to your liking. I’ll be making this often, as it’s the afternoons that are the hardest for me to resist impulse snacking!
- 1 long English cucumber
- 2 tbsp lemon juice
- 1 tbsp olive oil
- chili powder
- Peel (or not!) and slice the cucumber and add to a bowl
- In a measuring cup or mixing bowl add the ingredients and pour over, voila!
