Slow Cooker Loaded Baked Potato Soup RecipeI’ve just updated my photo for this delicious Loaded Baked Potato Soup Recipe, and made an adjustment to the recipe as well.  The original recipe as I posted it called for 6 cups of chicken broth.  The containers we buy (box) are 900ml, so I found it easier just to pour in 2 containers of chicken broth (1800ml = 7.6 cups, the original recipe called for 6 cups).

Ingredients
  • 7-8 red potatoes, diced into ½" cubes, skins on
  • 1 large yellow onion, diced
  • 6 cloves of garlic, minced
  • 2 (900ml) boxes of chicken broth (7.6 cups)
  • 2 tsp Seasoning Salt
  • 1 block (8oz.) cream cheese
  • Crumbled bacon (since I don't like the smell of frying bacon, I bought microwave bacon and put about 5 slices in the microwave)
  • Diced green onion
  • Shredded cheddar cheese
Instructions
  1. Add the first 5 ingredients to the slow cooker (easy, right?!)
  2. Cook on high 6 hours or low for 10 hours.
  3. In the last hour, remove about ½ the soup into a large mixing bowl. Puree the soup with the cream cheese and gradually introduce back to the slow cooker in batches.
  4. Cook for remaining hour, mixing every 15 minutes or so to ensure everything is well blended.
  5. When serving make sure to get the potato chunks from the bottom of the slow cooker as well, then serve with your favorite toppings.
  6. Sit back, rub your belly, and remark on a job well done!

  • I don’t know about the cream cheese, guess that’s the creamy part. I usually use milk & added leeks. I’ll try a smaller batch.

  • Was planning to make a recipe just like this later this week!! The one I found had corn instead of cream cheese, but maybe I’ll add both. Yumm 🙂

  • Don’t many potatoes come in a five pound bag already? Weighing them wouldn’t really be necessary.

    • Unless you had a 10 or 20 lb bag right? Or keep them in a bin in your pantry. 😉

  • I was very excited for this recipe. I love soup and I love slow cooker meals. So this was great. But I left out the bacon to make it vegetarian and then for the last hour of cooking, I added thinly sliced carrots and celery. They cooked just long enough to be done, but weren’t soft. They added some color and texture and gave me more than carbs to eat.

  • My potato soup recipe is very similar except i LOVE the smell of frying bacon, so I would make the bacon myself. I like to make bacon cheddar muffins to go with it for dipping 🙂

  • Love potato soup. But you can put the bacon in raw. That’s how I do it. Get lots of flavor from it that way.

  • Does it need to be red potatoes? Also, seasoning salt – different from regular salt? Can you tell I am not a great cook?

    • You can use yellow/Yukon Gold potatoes too, doesn’t matter! Yes, seasoning salt is different than regular salt. No worries, I was once a very novice cook too!

      If you don’t have seasoning salt I’m sure you can skip it – though I’d find some eventually if I were you, it’s yummy!

  • Thanks for the reply. Unfortunately, I made this soup on Friday and unfortunately I will have to make it again as my family loved it. Darn! We had some left over and my husband said it tasted even better two days later. I used a couple of dashes of Nature’s Seasons seasoning blend which I usually use on my rainbow trout. I used regular white potatoes that I had on hand and also popped in two carrots for fun. Did not have bacon on hand but next time will try that too. Really easy to put together in the morning and come home to some yumm after work.
