This recipe and the photo above is brought to you by my 7 year old! I didn’t make these! He participated in a “Cooking Club” after school a few weeks ago and came home with this recipe and the muffins, super proud of himself. So, per his request, here is the recipe to share!
French Toast Muffins

Ingredients
- 3 eggs
- 1½ cups milk
- ⅓ cup sugar
- 1 Tbsp vanilla extract
- 1 tsp ground cinnamon
- 10 slices bread, cubed
- 1½ cups frozen berry blend
- 2 Tbsp maple syrup
Instructions
- Preheat oven to 375 F.
- In a bowl, whisk together eggs, milk, sugar, vanilla and cinnamon until well combined.
- Cut bread into cubes and add to mixture. Toss gently until egg mixture is absorbed.
- Add berries and toss gently
- Divide mixture evenly into a greased muffin tin.
- Drizzle with maple syrup.
- Bake for 25 minutes.
- Drizzle more maple syrup over muffins before serving if desired.
Notes
These muffins freeze well and make a great breakfast or lunch kit treat.
