French Toast Muffins

This recipe and the photo above is brought to you by my 7 year old!  I didn’t make these!  He participated in a “Cooking Club” after school a few weeks ago and came home with this recipe and the muffins, super proud of himself.  So, per his request, here is the recipe to share!

French Toast Muffins

  • 3 eggs
  • 1½ cups milk
  • ⅓ cup sugar
  • 1 Tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 10 slices bread, cubed
  • 1½ cups frozen berry blend
  • 2 Tbsp maple syrup
  1. Preheat oven to 375 F.
  2. In a bowl, whisk together eggs, milk, sugar, vanilla and cinnamon until well combined.
  3. Cut bread into cubes and add to mixture. Toss gently until egg mixture is absorbed.
  4. Add berries and toss gently
  5. Divide mixture evenly into a greased muffin tin.
  6. Drizzle with maple syrup.
  7. Bake for 25 minutes.
  8. Drizzle more maple syrup over muffins before serving if desired.
These muffins freeze well and make a great breakfast or lunch kit treat.
