With three kids in school for the very first time (preschool totally counts as very important school, just ask my three year old!) I’m busier than I have ever been. Add to it evening activities for the kids, and I know I need to seriously reevaluate my dinner planning to figure out ways we can still eat as a family while still making it to our commitments on time.
Eating as a family is important to me, it’s the one time each day we can all sit down and touch base in an otherwise hectic and busy week. A recent survey conducted for M&M Meat Shops shows that only 30% of families sit down for dinner together every night, a shocking decrease from 47% in last year’s survey findings. An astonishing 20% of families eat dinner together only two nights a week or less, with 5% of these respondents never eating dinner as a family. I don’t want to be part of that statistic.
So why is family dinner put on the back burner? Conflicting schedules caused a dinnertime disconnect for 35% of those surveyed, while lack of time due to activities affected 26% of respondents, and no time to cook was cited as the reason for 14% of families.

Here’s a very simple recipe we use in our household, utilizing delicious M&M Meat Shops French Country Mushroom Soup (instead of a canned soup, trust me this is soooo much better!):
- 4 boneless skinless chicken breasts
- 1 pkg M&M Meat Shops French Country Mushroom Soup, prepared
- 1 cup water
- 1 cup uncooked long grain white rice
- ¼ teaspoon ground black pepper
- Prepare M&M Meat Shops French Country Mushroom Soup according to directions on the box (microwave is easiest)
- Stir the soup, water, rice and pepper in a baking dish
- Add chicken on top of mixture
- Cover with tin foil and place in oven
- Bake at 375 for approximately 45 minutes
- Remove foil from baking dish and broil for an additional 3-5 minutes if desired
- Let stand 5 minutes and serve

Oh my gosh this sounds delicious and SO EASY!! I LOVE mushrooms, rice and chicken, I cannot wait to make this!! One of my children only likes raw mushrooms, but I am hoping she will still eat this because I need to add some easy meals like this to my “portfolio” this winter – I love a meal I can just whip up and stick in the oven when our schedules are super busy.
