Leaves are falling, the air is getting a chill (especially on early school mornings!) and for some of us, we’re seeing a dust of snow in the mornings already. Fall is here, and not far behind winter looms. I love my warm summer weather, so it’s easy to get in a funk thinking about all the cold weather to come here on the prairies! Still, there are some good things about winter – we have some great family holidays, routine helps me stay sane, the new year brings with it new beginnings and if we’re lucky some of us escape somewhere sunny and warm too.
I joke that I want to be a bear and just hibernate all winter – which is probably why I turn to comfort food so often in the fall and winter months. Make no mistake, comfort food isn’t typically low-cal (though there’s ways to make some of it a little better for your waistline) but I truly believe that life is all about moderation. So I enjoy my hearty bowl of baked potato soup, but I also enjoy a delicious crisp salad some days or my favorite steamed veggies in a stir fry the next.

Slow Cooker Loaded Baked Potato Soup
Be warned, this soup has cream cheese in it along with shredded cheese, potatoes and bacon. Can it really get any better than that?
Lazy Cabbage Rolls Casserole
I’m Ukranian/Romanian and that means cabbage rolls are likely one of the first foods I was fed as a baby (with a side of perogies and sausage I’m sure!) My parents tried showing me how to make cabbage rolls once, and well…that was the end of that. Talk about labor intensive! Hug your baba. This is a way easier way to get that delicious cabbage roll meal without much work at all.
Chicken, cream cheese and chives all melty and gooey and mixed up inside a Pillsbury Crescent. These also freeze really well and are great for school lunches (you can even make little mini bite sized ones!)
This is a tried and true recipe that you really can’t go wrong with. Just make sure you only add noodles in the last half hour! This is one of those recipes that tastes even better the next day and the kids love it!
