I have been looking for new side-dish recipes for awhile now – the usual mashed potatoes or rice can get boring – and I’ve found some great ones thanks to Pinterest! After seeing this recipe on Pinterest I decided to give it a try – I absolutely devoured it. My kids didn’t mind it either so it’s a win if I got them eating green beans!
Roasted Green Beans & Mushrooms

Ingredients
- green beans (I used Mann's 12oz. pkg)
- 1 cup sliced white mushrooms
- 1.5 tbsp olive or vegetable oil
- 1 tbsp balsamic vinegar
- salt and pepper
- 2 tbsp fresh parmesan
Instructions
- Combine green beans, mushrooms, oil and vinegar in a bowl or zip loc bag and mix well
- Spread out on a cookie sheet and pop into a 400 degree preheated oven for 25 minutes
- Remove from heat, add salt and pepper to taste and then top with parmesan cheese before serving
