Slow Cooker Stew

slow cooker stewWe experienced one of our coldest days so far this winter, after being spoiled with ridiculously warm weather.  I decided it was the perfect day to make a warm, comforting, stew in the slow cooker.  I wanted to try a new recipe, one with some zing, and I adapted this recipe to do it!  The result is a fragrant, sweet, and tangy stew that the whole family loved.  Into the recipe file it goes!

An easy slow cooker recipe that's sweet, fragrant, and full of flavor!
Ingredients
  • 2 pounds beef stew meat, cut into 1 inch cubes
  • ⅓ cup flour
  • ½ teaspoon seasoning salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 tablespoon Worcestershire sauce
  • 1 onion, chopped
  • 1 container Campbell's beef broth (900ml)
  • ½ cup red wine
  • 1 cup water
  • 3 potatoes, diced
  • 4 carrots, sliced
  • 2 stalks celery, chopped
Instructions
  1. Place flour, seasoning salt and pepper in a zip loc bag. Add meat and shake to coat.
  2. Heat oil in frying pan or dutch oven. Add meat and onions to brown
  3. Transfer meat to slow cooker.
  4. In a separate container, mix ½ cup red wine (I used merlot) with 1 container beef broth and add to still-hot pain to deglaze.
  5. Pour over meat in slow cooker.
  6. Add remaining ingredients. I typically add whatever veggies I have on hand which can sometimes includes corn, red peppers or broccoli.
  7. Cook on low 8 hrs or on high 5 hrs.
Notes
Everyone has a different preference for stew consistency. I typically add flour or corn starch in the last 30 min of cooking to thicken the sauce.
