Mornings are busy in our household. My husband leaves before we’re up, so it’s up to this mom to get three kids ready and off to school each day. The huge advantage is that I work from home so most days, as long as the kids are dressed and fed and out the door it’s a win. Because it’s busy, it’s easy to fall back on cereal or toast for breakfast (which I don’t mind, as long as the kids have full bellies to get their brains in gear, I’m happy!) but I admit it can get monotonous. My son is almost 12 and yes, at that age where he never seems to be full! So, I’ve had to find ways to ensure he’s well-fed in the mornings so he can last until lunch time, and that means going beyond the basic cereal and toast.

Another easy breakfast in our household is easy baked eggs. Simply mix together eggs, peppers, ham or bacon, add some mushrooms or onions (it’s so easy and versatile, basically whatever I have on hand!) and bake! My kids devour these and IF there are any leftovers they can be kept in the fridge for an after-school snack.
