I picked up a bounty of veggies this week at Sobeys so I could make one of our favourites – slow cooker vegetable beef stew. There’s something so comforting about beef stew, don’t you think? It’s super-easy to make, and the leftovers always taste even
better the next day! My kids love taking it in a thermos for lunch too.
So now’s the time to head to Sobeys and stock up on some of your favourite fruits and veggies. - 2 pounds beef stew meat, cut into 1 inch cubes
- ⅓ cup flour
- ½ teaspoon seasoning salt
- ½ teaspoon ground black pepper
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 tablespoon Worcestershire sauce
- 1 onion, chopped
- 1 container Campbell's beef broth (900ml)
- ½ cup red wine
- 1 cup water
- 3 potatoes, diced
- 4 carrots, sliced
- 2 stalks celery, chopped
- Place flour, seasoning salt and pepper in a zip loc bag. Add meat and shake to coat.
- Heat oil in frying pan or dutch oven. Add meat and onions to brown
- Transfer meat to slow cooker.
- In a separate container, mix ½ cup red wine (I used merlot) with 1 container beef broth and add to still-hot pain to deglaze.
- Pour over meat in slow cooker.
- Add remaining ingredients. I typically add whatever veggies I have on hand which can sometimes includes corn, red peppers or broccoli.
- Cook on low 8 hrs
I love a good beef stew, and I have been eating so much fruit and veggies lately which is a good thing on the waistline just not the pocketbook!!

We have totally been taking advantage of the lower produce prices. After cauliflower was $8 a head we are so happy to be able to pick one up for $3 now. Had veggie stir fry for dinner! 🙂

So important to eat healthy. We try to make home-cooked meals everyday but produce prices are getting so expensive!

It is getting very expensive to eat healthy. I am finding I am shopping the sales and our veggies/fruits for the week are based on that. I do like that Sobey’s is trying to keep their produce prices lower.
I need to start using my slow cooker more. This recipe looks fab for cold winter nights. This would forestall the “I can’t be bothered to make anything” when I get home late from work some nights.

Unfortunately our nearest Sobeys is too far away for a weekly shop – love beef stew but I would rather make my own beef broth then buy a proceessed one – surely a bought one cannot not count as a better food
