Pink Lemonade Ice Cream!

Every town seems to have a favorite ice cream spot. No, I’m not talking about the big chain restaurants, which surely have some spectacular treats, I mean those little independently owned ice cream shops that are only open seasonally, that we wait for with anticipation every spring. Here in Regina, that spot is Milky Way. Opened in 1956, it’s been a Regina must-visit for decades. I love that they’ve embraced social media too – you can follow them @MilkyWayRegina to see what their specials of the week are, what the flavour of the day is, and sometimes who has stopped by for a visit (Toby Keith was apparently just there this week!)

So, when I received a Hamilton Beach 1/2 Quart Ice Cream Maker, I immediately pounced on Pinterest to see what recipe I could create first! I wanted everything I remembered from my favorite ice cream hangout, and then found a ton more super ideas online. Pinterest, as always, didn’t let me down!  While vanilla and chocolate ice cream are perfect bases for a candy mixture added or on top, I wanted to try something infused with summer – and so – Pink Lemonade Ice Cream was on the menu at our ice cream shop this week!

Pink Lemonade Ice Cream
 
This ice cream is more soft-serve than hard-ice cream, or even sherbet consistency. Best for in a bowl than in a cone!
Ingredients
  • 1 cup whole milk
  • 1 cup sugar
  • 1 tsp vanilla
  • 2 cups heavy cream (whipping cream)
  • ½ tetra pack/tin pink lemonade concentrate
  • red food coloring
Instructions
  1. Place the whole milk, sugar and vanilla in stand mixer bowl to whisk until sugar dissolves.
  2. Then add the cream, juice concentrate and food coloring and mix again for a few minutes (food coloring just enhances the pink color, I added about 7-8 drops but could have used more to make it more vibrant!)
  3. Cover and place in the fridge for at least an hour, best if overnight
  4. When ready to make, place frozen ice cream maker bowl on machine, turn on, and pour mixture in through the top
  5. Mix for 20-40 minutes. The consistency didn't seem to thicken much after 20 minutes so you should be OK at the minimum.
  6. Place in a bowl and freeze for later or serve immediately.

Yes, you have the initial purchase price to consider ($54.99 regular price) but for our family of five that’s – no joke – the same amount spent at two trips to the ice cream shop of choice. The basic ingredients for ice cream are milk, heavy cream and sugar which we usually have on hand anyway. Next, it’s up to you to create your own amazing ice cream (and gelato and sherbet) flavors utilizing what you have on hand. A creamy vanilla ice cream is good any time of the year, mind you!
