Pink Lemonade Ice Cream
 
This ice cream is more soft-serve than hard-ice cream, or even sherbet consistency. Best for in a bowl than in a cone!
Ingredients
  • 1 cup whole milk
  • 1 cup sugar
  • 1 tsp vanilla
  • 2 cups heavy cream (whipping cream)
  • ½ tetra pack/tin pink lemonade concentrate
  • red food coloring
Instructions
  1. Place the whole milk, sugar and vanilla in stand mixer bowl to whisk until sugar dissolves.
  2. Then add the cream, juice concentrate and food coloring and mix again for a few minutes (food coloring just enhances the pink color, I added about 7-8 drops but could have used more to make it more vibrant!)
  3. Cover and place in the fridge for at least an hour, best if overnight
  4. When ready to make, place frozen ice cream maker bowl on machine, turn on, and pour mixture in through the top
  5. Mix for 20-40 minutes. The consistency didn't seem to thicken much after 20 minutes so you should be OK at the minimum.
  6. Place in a bowl and freeze for later or serve immediately.
