I have a confession to make. Well, I have a few actually but you’re only getting one today.

I saw new Old El Paso Restaurante Chicken Tinga on the shelves at the grocery store a few weeks ago, picked it up to have a closer look and didn’t put it in my cart. It’s embarrassing now because I really thought – “this looks too complicated, I’ll just use my usual slow cooker recipe.”  Had I known how easy it is to make delicious restaurant-style Chicken Tinga, I’d have picked up a few boxes (like I plan to do on my weekly grocery trip now!)

Truth be told, I do have a really great chicken taco recipe that cooks all day in the slow cooker. Which is fantastic. When I’m on my game and think ahead to actually make it in my slow cooker.  The problem, of course, is that I’m like you – a busy mom driving my kids to one activity or the next or – the rare time – fitting in some social activity for myself in the evenings, and I don’t always have a dinner plan.

Old El Paso Restaurante products showed me that you can whip up a delicious Mexican feast in just a few minutes that tastes delicious and doesn’t include any complicated process or ingredients.  Still skeptical?  Take a look at how easy it was to create the above masterpiece (seriously, it’s a gorgeous picture right? You’ll need to ensure you have ingredients on hand to make this, but it’s likely you already have them in your fridge anyway.  The Old El Paso Restaurant Chicken Tinga comes with 10 soft tortilla shells, a seasoning packet for the chicken, and chipolte sauce for topping.  Grab some chicken, lettuce and cheese out of the fridge and you’re good to go.  I had some ripe avocados on hand to whip up some guacamole because I’m fancy like that.

 

chiken tingaThe directions are really easy to follow – simply cut a slit in the chicken breasts and place in a large skillet to cook along with the seasoning and water (or chicken soup broth) until no longer pink.

Once the chicken is cooked through, simply remove from the skillet to shred and then put it all back in to soak up the delicious simmering sauce.  After a few minutes of simmering goodness, it’s ready!

Then, simply add the chicken to the tortilla shell and top with your favorite ingredients.  In our case, this was guacamole, lettuce, cheese and cilantro!  My kids like to add ranch dressing to theirs as well.  Note, there’s a lot of liquid so use a slotted spoon to scoop the chicken or simply provide a bunch of napkins at dinner time and a fork to scoop up everything left on the plate!
