Fall is upon us, and gardens are being plucked of their bounty. If you’re like me, and fortunate to have a friend offer to drop off their extra vegetables (yes, please!) or if you’re fancy enough to have a green thumb of your own and have plenty of garden vegetables to use up, here’s an easy recipe that you can freeze for later. Nothing beats home made spaghetti sauce!
Freezer Spaghetti Sauce
Ingredients
- 4 cloves of garlic, minced
- 3 onions, diced
- 1 green or red pepper, diced
- ¼ cup olive oil
- 12 cups chopped tomatoes (skin, juice, seeds, everything!)
- 2 cups celery chopped
- 2 tbsp oregano
- 2 tbsp basil
- ¼ cup white sugar
- 1 tbsp salt
- ½ tsp black pepper
- 1 can (6oz) tomato paste
Instructions
- In a dutch oven (or large pot) saute together the onion, garlic, green pepper, and olive oil until onion is transparent (about 10 minutes).
- Add the chopped tomatoes, celery, oregano, basil,sugar, salt, and ground black pepper. You can also add other vegetables from your garden (or generous friend!) like zucchini, mushrooms and more.
- Cook for 2 to 3 hours on low, stirring frequently. Cool and then divide into freezer bags. Freeze flat to save space in your freezer!
This looks great. In October, we spend a weekend making a ton of meals that we put in the freezer for fast weekday dinners. This is definitely going to be added to our list. Thanks for sharing.

Sounds like a great recipe. I have only made my own sauce once but should make it more often since I buy a ton of it!
I add lots of vegetables to my spaghetti sauce. Onions and garlic are essential, but then peppers, celery, carrots are always included. Extras often added are mushrooms, beans, Swiss chard and finely chopped kale, just before serving. And I almost always use my slow cooker for pasta sauces, it takes away the stirring and ease of burning! 🙂
