Freezer Spaghetti Sauce

Fall is upon us, and gardens are being plucked of their bounty.  If you’re like me, and fortunate to have a friend offer to drop off their extra vegetables (yes, please!) or if you’re fancy enough to have a green thumb of your own and have plenty of garden vegetables to use up, here’s an easy recipe that you can freeze for later.  Nothing beats home made spaghetti sauce!

Freezer Spaghetti Sauce
 
Ingredients
  • 4 cloves of garlic, minced
  • 3 onions, diced
  • 1 green or red pepper, diced
  • ¼ cup olive oil
  • 12 cups chopped tomatoes (skin, juice, seeds, everything!)
  • 2 cups celery chopped
  • 2 tbsp oregano
  • 2 tbsp basil
  • ¼ cup white sugar
  • 1 tbsp salt
  • ½ tsp black pepper
  • 1 can (6oz) tomato paste
Instructions
  1. In a dutch oven (or large pot) saute together the onion, garlic, green pepper, and olive oil until onion is transparent (about 10 minutes).
  2. Add the chopped tomatoes, celery, oregano, basil,sugar, salt, and ground black pepper. You can also add other vegetables from your garden (or generous friend!) like zucchini, mushrooms and more.
  3. Cook for 2 to 3 hours on low, stirring frequently. Cool and then divide into freezer bags. Freeze flat to save space in your freezer!
