Easy Salad Rolls
Monday, Sept 12 was Moon Festival and we celebrated by making one of our favorite Asian recipes! Salad rolls are typically a lunch meal or an appetizer, but my family likes them so much that we make a ton and make a meal out of it!
I started making these when I lived in a small town and the closest place I could get a salad roll was an hour away! I was intimidated the first time I made them but found out they’re really easy – it’s just the prep work that takes time. The best part? They taste just like restaurant-style salad rolls!
Ingredients:
~ 3 chicken breasts
~ diced carrots (1/2 cup)
~ diced red pepper (half)
~ diced cucumber (1/2 cup)
~ diced peas in shell (1/2 cup)
~ 1 clove garlic
~ VH Garlic Hoisin Sauce
~ Rice paper wraps
~ vermicelli rice noodles
1. Cut up chicken into diced-size pieces, brown in a pan over med-high heat with crushed garlic and 2 tbsp VH Garlic Hoisin sauce. Remove from heat and set aside.
2. Cut up all your veggies. It’s not necessary to separate them into bowls.
3. Boil a pot of water and add in the full package of vermicelli noodles. It looks like a lot but once it cooks there’s plenty of room in the pot. It only takes about 2-3 minutes to cook these. Strain and rinse with cold water. These will hold onto water so you can use your hands to drain more water off of them, or pat dry with paper towel or a cloth in bunches. Set aside in a bowl.
4. In a dutch oven (is that a Canadian thing? Er…large pot) put just enough water in the bottom to cover. Keep your burner on the lowest setting to keep water warm. Put in a single rice wrap, ensuring it’s completely submerged so it doesn’t roll up. Let sit 1 minute and take out. Pat dry.
5. Place your cooled vermicelli noodles on the wrap.
6. Add the chicken and veggies, then roll up and you’re done!
Serve with VH Garlic Hoisin sauce for dipping!

They are awesome with shrimp too! I make a dip with soya sause, water, minced ginger, minced garlic, fresh squeezed lime juice, sugar and a dash of tabasco. mmm

I’ve made these with tofu before, too – such an easy way to introduce young eaters to new food!
I would have never thought that they were that easy to make, it’s as simple as making a burito!
Aren’t these just spring rolls…
Spring rolls are deep fried, and salad rolls are fresh and not. At least that’s always been my understanding!
We call that a dutch oven here in the Midwest U.S., too. Pulling the covers over your significant other’s head after farting is also called a dutch oven as well. Thought you’d love to know 😉
Well no doubt the idea is unique….in my country this type of stuff is wrapped in a thin layer of something that is called “Chapati”. Chapati can be prepared by simply making a dough out of flour with a suitable amount of salt and cooking it on
pan which is convex from upward. This makes salad roll a bit more nutritious.
I find that salad rolls are really hard to get tight without breaking. If you let them dry a little before rolling, and don’t fill them too much it goes a bit easier.
Ooh YUM! I have never in my life had (or made for that matter) a spring roll or salad roll, but for some reason, I’m drawn to these. I just learned to make these with shrimp but your recipe with chicken sounds delicious. I softened the rice papers with tap water in a pie plate, but I just read the directions on the package. “1. Immerse a towel in water. 2. Squeeze towel to remove excess water until damp. 3. Cover 1 sheet of rice paper with damp towel, wait 1 min. to allow rice paper to absorb moisture and soften.” That sounds easier so I’ll try it next time.

well I FAIL AS a cook, but at least I tried and the only place I actually found the rice wraps was Giant Tiger (I tried superstore and walmart first)
I get mine from Superstore and Sobey’s, Sabina! So it didn’t work? That’s too bad, they’re so good when they do!
Don’t soak the rice paper long, just a quick 5 second dip. water can be lukewarm. Give the rice paper a chance to absorb the water. Even if it still feels a bit hard, it will soften up. If you soak it to long, you will end up with busted rolls. Also wrapping individual rolls in plastic wrap helps keep them from drying out. We make these all the times, even over hundreds of them for parties.
