Whatever way you choose, there’s no denying that Nutella is creamy, hazelnutty (is that a word – let’s go with it) goodness! Celebrity Chef Faita has created six delicious, new breakfast recipes to add a little joy to your morning (or mid-morning snack!) including Greek Yogurt with Homemade Granola and Nutella Apple and Carrot Latkes with Nutella, Ricotta and Fruit Crostini with Nutella, Tortilla Breakfast Cups with Nutella, Blintzes with Pineapple, Yogurt and Nutella, and Chia Banana Strawberry Breakfast Jar with Nutella.
As part of the Nutella Network (fancy, right?) was recently invited to Toronto to learn first-hand from Chef Faita how to create these new recipes, in a state of the art kitchen. I’m a visual person, I prefer recipes heavy with photos or video to explain the process, so having an in-person experience like this was fantastic!
Making tortillas at home is actually surprisingly easy, and whipping up tortilla chips with Nutella is an easy way to incorporate fresh fruit into a breakfast or meal along with a satisfying crunch. Check out the link for Breakfast Tortilla Cups With Nutella along with, yup, a helpful video too so you get it right the first time!
I like the versatility with this recipe. While the original recipe calls for ricotta, you can also try cottage cheese. Blackberries, raspberries and mango were used but I think it would be delicious with mandarin and strawberries – you can basically make this recipe work as long as you have the fundamentals of a crispy tortilla, fresh fruit, a creamy mix and of course, delicious Nutella.
- 1 whole wheat tortilla
- Olive oil
- ⅓ cup ricotta
- Pinch of cinnamon
- 1 tbsp Nutella®
- 2 tbsp mango, diced
- 2 tbsp black berries
- 2 tbsp raspberries
- 1 tsp pumpkin seeds
- Preheat oven to 325F.
- Using a knife, cut tortilla into a 5x5-inch square. Brush both sides with olive oil and place into a large muffin tin, creating a cup.
- Place in the oven and bake for 12-15 minutes or until crisp and golden. Remove from the oven and let cool.
- In a small bowl, mix ricotta with the cinnamon.
- Fill the cup with the ricotta mixture, then spoon Nutella® on top.
- In another small bowl, gently mix the fruit.
- Garnish the tortilla cup with the mixed fruit, laying some on top and around the dish. Finish with some pumpkin seeds!
