Mornings are busy in our household. My husband leaves before we’re up, so it’s up to this mom to get three kids ready and off to school each day. The huge advantage is that I work from home so most days, as long as the kids are dressed and fed and out the door it’s a win. Because it’s busy, it’s easy to fall back on cereal or toast for breakfast (which I don’t mind, as long as the kids have full bellies to get their brains in gear, I’m happy!) but I admit it can get monotonous. My son is almost 12 and yes, at that age where he never seems to be full! So, I’ve had to find ways to ensure he’s well-fed in the mornings so he can last until lunch time, and that means going beyond the basic cereal and toast.

Ok, I’m strange. I like SOUP for breakfast, and my favourite breakfast soup is Cantonese Egg-Drop Vegetable bullion soup! Heat up the soup to the point of boiling. In a small cup, break open an egg, beat lightly with a pair of chopsticks . Drop the slightly-beaten egg mixture into the nearly-boiled soup stock, and stir with the chopsticks until the egg mixtures cooks into stringy, spaghetti-like strands. Add finely sliced celery and nantes carrots for colour, ground black pepper, and a small clove of garlic for some “kick”
