Pie on a stick you say? I was a bit skeptical too – that is until I took a chance and made some delicious Saskatoon Pie Pops. Turns out it’s not just a clever cliché, it really was easy as pie! I’ve been making pie since I was about 8 years old when my dad showed me how to do it one afternoon. It is a treasured memory for me and I’ve been baking pies ever since to the delight of my family and friends. Pie Pops was a new one, but then again I figured, why not? I love that Easy as Pie Pops by Andrea Smetona has an easy to follow layout for ingredients, instruction as well as beautiful coloured photos.
What I appreciated even more was the incredible amount of flexibility and possibility that is present in this book that really allows the baker to be creative! This is evident in the options available in the ingredient list from ready-made piecrust, and other optional ingredients listed in the recipes. After my initial baking of pie pops, I made a whole second batch without the sticks, and thought how great it would be to serve up some mini-pies after a family supper alongside some ice-cream, or even to send some to school with my son. I know from experience in baking pies, that they freeze incredibly well either baked or ready-to-bake and would be perfect to pull out of the freezer for unexpected company or as a last minute dessert.
Easy as Pie Pops isn’t just limited to pie either. This cookbook is chalk full of ideas for baking food from sweet-filled pie pops like the ones I made, to a more savory variety like pizza, ham & cheese, chicken pot pie or vegetable filled. There is also great instruction for the traditional cake-pops and even a few great recipes for muffins and loaves. I tried out Nonna’s Zucchini Loaf and was impressed how easy the recipe was to follow and of course how delicious and moist the mini-loaves turned out.
Whether you are a baker yourself, or know someone who is, this is definitely a cookbook you’ll want to add to your collection for quick, easy, and creative recipes!
