We were teased this spring – the weeks leading up to March 20th were blissfully warm and sunny and since spring hit…it literally hit with a wall of snow! Hopefully we will be back to enjoying that warm spring weather again next week.
Does the warm weather inspire your cooking? It sure does here – somehow spring and summer bring out the colorful hues in my cooking and we tend to eat a ton more vegetables in the warmer seasons even though I don’t source them from my own garden (seriously, I’ve tried people, it is not my strength!)
The photo above is from my recipe for delicious Chicken Roulades – they’re stuffed with a colorful mixture of spinach, red pepper, red onions and cheese! It’s one of my summer favorites.
My 4 year old has been asking for corn on the cob for about a week now (once she gets something in her head…) and we’ve been telling her we have to wait until the farmers finish growing it before we can buy it at the store! That’s one food I can’t wait to sink my teeth into. Other foods – garden fresh peas and summer raspberries!

That cake is so pretty. I think we eat more vegetable in the summer because it’s hot and veggies are refreshing and light. You don’t feel like beeing stuffed when it’s hot. 🙂
