Popcorn Cupcakes

I am so not a cake maker.  I typically buy my kid’s birthday cakes from the grocery store (and thankfully they think they’re great) but there’s something to be said for the pride a mama has when she makes something special for her kid’s birthday.  I get that.

Since I can master cupcakes I decided to make something really fun for my daughter’s birthday last year – Popcorn Cupcakes!  How did I do it?  It’s incredibly simple.

Popcorn Cupcakes

Use your favorite cake mix or make cupcakes from scratch if you’re fancy like that.

Frost the cupcakes with white icing.

Top with mini marshmallows immediately after frosting.

Wrap a decorative cupcake sleeve around and you’re done!  You can find cupcake sleeves in dollar stores, kitchen stores, and online.  I found these particular ones at a place online called Roundabouts Cupcake Sleeves.

See?  I told you it was easy!  These were a hit at my daughter’s birthday party and it didn’t take any time (or cake mastery) at all!
