I love Mexican food – my sisters made tacos for my 10th birthday party (amazing the things you remember, why did that stand out?) and I was hooked! The best Mexican food is definitely in Mexico but thankfully there are some great restaurants here in Canada that can come close and I have a few home recipes that definitely satisfy a craving (I tried growing cilantro in my deck-garden this year but failed miserably.)
Some of my favorite recipes on my Recipe Page include Corn Salsa and Easy Fresh Salsa, yum!
My favorite Mexican-food at home is Steak Tacos which were a lot easier to make than I thought. I had always made ground beef tacos until trying the steak and now that’s my definite preference, with lots of lime and cilantro!
As a Life Made Delicious Connector for General Mills I was given the opportunity to sample some Old El Paso products including three new products: an Extra Mild Hard Taco dinner kit, a Hot & Spicy Fajita dinner kit and a new Mild Taco Seasoning. I love hot and spicy meals but of course that doesn’t work well with young children. The mild taco kids were a real hit with them (I needed extra salsa to spice mine up!) and I loved the Stand ‘n Stuff tacos which made meal prep easy (and less frustrating for them as well). The Hot & Spicy Fajita dinner kit had a lot of spice though it had a heavy chipolte flavoring too.
I still haven’t used up all the items included in my kit from General Mills but did love making my home made salsa in the included salsa bowl one evening for guests, how cute is this??

I have a fab recipe for Green Chili Snacks and Pinto Tortilla Soup. Both are super easy to make and super tasty. With the soup, you can spice it up just with the heat of the salsa you use. My kids and grandkids loved the Green Chili Snacks and they can be served hot or cold. If you want the recipes, let me know. I’ll be happy to share. (These are also pretty healthy too.)
