Oh My Velveeta! Cheesy Broccoli Soup, Come Here!

Velveeta is a big win in many recipes found online, on TV, and at family barbecues all summer long! Do you have a favorite Velveeta recipe? One of my favorites is a Mexican dip made with Velveeta and canned tomatoes. How can something so simple taste so delicious?

The same likely holds true for the Velveeta Cheesy Broccoli Soup recipe shared above! I love broccoli cheese soup and it’s a no-brainer that Velveeta would make this soup amazing. The trouble would be ensuring there are leftovers for lunch because I know my family would devour this. Enjoy!

    Pinch yourself. You’re not dreaming. This thick, creamy broccoli Cheddar soup that’s ready in less than 30 minutes is the real deal.

    Time = prep: 10 min, total: 25 min

    Servings total: 6 servings, about 1 cup each

    WHAT YOU NEED…

    2 Tbsp. butter or margarine
    1/4 cup chopped onion
    2 Tbsp. flour
    2-1/2 cups milk
    3/4 lb. (12 oz.) VELVEETA®, cut up
    1 pkg. (10 oz.) frozen chopped broccoli, thawed, drained
    1/8 tsp. pepper

    MAKE IT: MELT butter in large saucepan on medium heat. Add onion; cook and stir 5 minutes or until onion is tender. Add flour; cook 1 minute or until bubbly, stirring constantly.

    STIR in milk. Bring to boil. Reduce heat to medium-low; simmer 1 minute.

    ADD remaining ingredients. Cook until VELVEETA is melted and soup is heated through, stirring occasionally.

    VELVEETA SUBSTITUTE – Substitute frozen chopped spinach; frozen cauliflower, chopped; or frozen asparagus spears, chopped, for broccoli.

    USE YOUR MICROWAVE – Place onion and butter in 2-quart microwavable casserole or bowl. Microwave on HIGH 30 seconds to 1 minute or until onion is tender. Add remaining ingredients; mix well. Microwave 6 to 8 minutes or until VELVEETA is melted and soup is heated through, stirring after 4 minutes.

  • i love velveeta, but not a huge fan of cooking with it. its too much like cooking with cheeze whiz which i hate. the only thing i like to cook with velveeta is mac and cheese, but mostly i just love to cut it into cubes and eat it out of the box lol. too expensive to buy often though.
