Today, October 14th is World Egg Day – a day to celebrate all the goodness of the humble egg, but also to recognize the work and dedication of our egg farmers across the globe and of course especially here in Canada. Did you know? Canadian egg farmers collectively support close to 200 community programs, causes, charities and events across the country—now that’s something to celebrate!
Of course, I can’t help but note that it’s also Agriculture Week as well so the two events go hand in hand, or like eggs in a basket, if you will!
We know eggs are healthy and make a great breakfast, but in case you need a refresher – one large (53g) Grade A egg contains 6g of protein and only 70 calories! Packed full of vitamins and minerals (Iron, Vitamins A, D, E and B12 and more!), eggs make mornings easy and I feel good knowing my kids are going off to school with a nutritious and filling breakfast. Here’s one of my favorite, easy, egg recipes that my kids gobble up (I’m in post-Thanksgiving bliss still, and yes, full of puns!)
- 4 eggs
- 1 cup milk
- ½ cup chopped spinach
- ¼ cup diced red pepper
- ¼ cup diced mushrooms
- 1 tbsp diced onion
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, chopped
- Salt and pepper to taste
- Preheat oven to 325F
- Whisk milk and eggs in a bowl until well blended
- Stir in remaining ingredients
- Pour into 12 non-stick muffin cups (I spray mine with cooking spray)
- Bake 40 minutes

We made egg muffins kind of like that. They turned out great! Our fam eats a lot of eggs.

Yay for World Egg Day, my favourite egg recipe is Dutch Baby Pancakes.
I eat a ton of eggs and it’s always nice to find recipes that freeze well because I’m not very energetic in the morning. I like foods I can just reheat and eat!
so i didn’t have any eggs today BUT i will totally make up for that tomorrow when i make this delicious recipes mmmm….that is what the weekends are for 🙂

We love our eggs! A family favorite is a zucchini, onion, and parmesan cheese omelette!! Perfect for breakfast, lunch, or dinner!
