I found a recipe online for Buffalo Chicken Rolls with photos to illustrate exactly how to make them. I adjusted the recipe a bit, tried my hand at the envelope technique and ended up with a flat envelope more than a roll! And so, Buffalo Chicken Pockets were created!
Buffalo Chicken Pockets

Ingredients
- 12 egg roll wrappers
- 2 chicken breasts
- ½ cup Frank’s Red Hot Sauce
- ½ cup diced carrots
- ½ cup diced celery
- Small bowl of water
- Nonstick cooking spray
- Blue cheese or Ranch dressing, for serving
Instructions
- Preheat oven to 400 degrees
- Boil chicken breasts for 20 minutes, cool, then shred with forks
- In a small bowl, stir chicken and hot sauce
- Lay out egg roll wrappers on a clean flat surface with bowl of water ready
- In each egg roll, place a spoonful of chicken and top with carrots and celery
- Refer to below photos for rolling technique, use water to help stick the sides of the egg roll wrappers together
- Spray each pocket evenly with cooking spray and place on a non-stick cookie sheet
- Bake for 13-15 minutes, or until rolls are browned and crispy
- Enjoy!
Notes
I was surprised how crispy these rolls were even without a wire rack to place them on above the sheet. So if you have one, use it, but if not no worries they still turned out crispy!
I think mine turned into pockets because my technique was wrong - maybe you can create rolls!

I would have never thought to put egg roll wrappers and buffalo chicken together! These look delish and will be pinned so I can try them out later (post diet). The only thing I didn’t love about this recipe is that you have to spray each pocket with cooking spray. We have taken that item out of the cupboard in the quest for healthier eating. I may try brushing olive oil on them to get that crispy effect. Thanks for a great recipe.
