This is one of my favorite recipes, though I’m the only one in the house that has a love of green peppers! I like it because you can make the sauce in the morning and then everything is ready to go later in the day when you prepare it for dinner!
Ingredients:
2 chicken breasts
2 tbsp oil
1 cup water
1/2 cup ketchup
3 tbsp soy sauce
1/8 tsp black pepper
2 tbsp flour
1 onion, diced
2 green peppers, sliced
1 can mushroomsInstructions:
1. Cut up chicken into bite size pieces, heat oil and add the chicken.
2. In a bowl, whisk together the water, ketchup, soy sauce and pepper. Gradually whisk in flour. (This is the step that can be done earlier in the day)
3. Remove chicken from skillet, stir in the liquid mixture and bring it to a boil.
4. Add the chicken back into the skillet, along with the onion.
5. Reduce to simmer, cook 20 minutes with the lid on.
6. Add peppers and mushrooms, cook for an additional 10 minutes. Serve over rice.

Ohhh…I love me some crock pot meals so let me know how it turns out. Probably best to leave the green peppers for the last hour or so, or less!
