Easy Pumpkin Spice Latte
 
Ingredients
  • 2 cups milk (any % you choose)
  • 2 tbsp canned pumpkin puree
  • 2 tbsp white sugar
  • 2 tsp vanilla extract
  • ½ teaspoon pumpkin pie spice
  • ½ cup strong coffee or espresso
  • canned whipped cream
Instructions
  1. Add the milk, pumpkin, sugar, vanilla and pumpkin pie spice to a small sauce pan over medium-high heat. Bring almost to a boil. (Alternatively you can use a 2-cup Pyrex measuring cup and heat in the microwave).
  2. Remove from heat/microwave and add to a blender. Blend on high until the milk begins to froth, about 2 minutes.
  3. You will have enough milk/pumpkin mixture for 2 mugs. When pouring coffee in, try to add it along the side of the mug so the frothy milk mixture maintains it's setting but if you mess it up, that's OK too, it still tastes just as good!
  4. Add a healthy shot of whipped cream topping and sprinkle with pumpkin pie spice, cinnamon or nutmeg and serve. Extra points added if you take the first sip without getting whipped cream on your nose.
