Slow Cooker BBQ Chicken Wraps
 
Ingredients
  • 4 large chicken breasts
  • 1 tbsp smoked paprika
  • 1 tsp garlic salt
  • ½ tsp pepper
  • 1 small onion, chopped
  • 1 bottle of beer
  • 1 bottle BBQ sauce
  • 1 package tortillas
  • 1 package Coleslaw Mix
  • 1 bottle Coleslaw Dressing
Instructions
  1. Place chicken in the slow cooker and season with paprika, garlic salt and pepper
  2. Add onions, beer, and BBQ sauce
  3. Mix well, cover, and cook on low 7 hours
  4. At 7 hours, shred chicken in the pot with forks, cover and continue cooking for the final hour
  5. Mix bag of coleslaw with dressing and place in the fridge at this point, so it has an hour to chill
  6. To serve, place shredded chicken in tortilla (making sure to scoop out with a draining spoon to avoid large amounts of liquid), top with coleslaw, wrap it up and serve!
Notes
If you use frozen chicken, you may find the consistency a little more watery than if you use thawed.

I used 2 bottles (380ml each) sauce the first time I made this, but cut it down to one bottle the next time, and it was great. I used Budweiser Premium BBQ sauce on another date as well and it was just as tasty. Use your favorite sauce!

I used Molson Canadian beer – I don’t think it would matter which beer you use, to be honest, but I’ve read that dark ales may be really good to try.

Top however you like – I like coleslaw as I find the creamy taste helps cool some of the BBQ flavor, but the kids like theirs without. My husband tops it with red onions.
