Hearty Holiday Breakfast Casserole

It’s funny how your goals and perceptions about Christmas change as you grow older. When I was a kid, it was all about the gifts at Christmas, and perhaps a little bit of excitement about school concerts and the chance of chocolate.

Now, as an adult with a family of my own, I hold the excitement that the kids have about those childhood things, but the holidays for me are all about spending time with my family and that includes all the delicious foods we share together. My sister and I plan the menu for our Christmas visit months in advance and swap ideas and recipes leading up to Christmas. It’s always helpful if we can eliminate the stress around cooking holiday meals, in the form of prepping in advance or designating little elves in the kitchen to come help.

Hearty Holiday Breakfast Casserole

Especially on Christmas morning, we don’t want anyone to miss the fun being stuck in the kitchen – so this is a recipe our family uses because everything is prepped the night before well before Santa arrives, and you just pop it in the oven while everyone is opening gifts or sharing a great family story.

The great thing about this recipe is that it’s much like an egg omelette in that you can add whatever ingredients your family likes. Mine has Grimm’s Meats British Banger Sausage, Grimm’s Meats Carved Classic Ham, along with onions, mushrooms and red peppers.

Hearty Holiday Breakfast Casserole
 
A delicious hearty casserole for busy mornings (because you prep it the night before!) filled with ham, sausage, eggs and veggies.
Ingredients
  • 12-16 slices of bread, crusts removed
  • 8-10 cheese slices
  • 1 package of Grimm's Carved Classic Ham 125g
  • 2 packages (300g each) of Grimm's British Banger Sausage
  • 10 eggs
  • 2 tsp Worcestershire sauce
  • 1 tsp dry mustard
  • 3 cups milk
  • ½ cup onion
  • ½ cup red or green pepper (or both!)
  • ½ cup diced mushrooms
  • salt/pepper to taste
  • ½ cup butter or margarine, melted
  • 1 cup cornflakes
Instructions
  1. Remove the casing from the Grimm's British Banger Sausage, crumble and fry in a frying pan until cooked through.
  2. Butter the bottom of a 9x13 baking dish
  3. Lay 6-8 slices of bread in the bottom of the dish (I remove the crusts)
  4. Cover with a layer of Carved Ham
  5. Next, lay cheese slices on top of the ham
  6. Then, cover with the British Banger Sausage crumble
  7. Lay another 6-8 slices of bread on top of the cheese
  8. In a bowl, beat the eggs and add the Worcestershire sauce, dry mustard, milk, onion, peppers, mushrooms, and salt/pepper
  9. Pour liquid mixture over the casserole, cover and place in the fridge overnight
  10. In the morning, remove casserole from the fridge, melt ½ cup butter or margarine and pour over the casserole.
  11. Top with 1 cup cornflakes, crushed or whole
  12. Bake, uncovered, in 350 degree oven for one hour.

Not that you’ll have a liklihood of it, but this recipe also makes great leftovers later in the day, should anyone want a little nibble before turkey dinner! We also use this recipe for other holidays and even summer vacations because it’s so easy to prep ahead and feeds a crowd.
