The holidays certainly hold the promise of a lot of food. There’s a reason why stretchy pants are a favourite in January! While I most certainly promote losing weight and healthy living, the holidays are a time to indulge and enjoy the feasts of the season. Still, there are days when I just crave the crunch of a salad.
Salad Rolls are super easy to make and require little time to prep at all. Simply use your favorite salad ingredients – today I used lettuce, matchstick carrots, snowpeas, cucumber and red pepper – and then moisten rice paper rolls on the stove in a pot of shallow water. It takes less than a minute or so to make the rice paper soft and then you’re good to go! Simply roll up your favorite ingredients in a rice paper roll and set aside.
Salad rolls need a delicious dipping sauce; it makes all the difference between a bland salad roll and a zesty holiday appetizer you can present to your guests or simply save for yourself while watching Netflix in front of the fire. This recipe has no dairy or eggs and utilizes creamy Silk Almond Beverage to add to the nutty flavor.
Asian Dipping Sauce Recipe:
¾ cup peanut butter
3 Tbsp Rice Vinegar
½ cup Silk Almond Beverage
¼ cup soy sauce
¼ cup fresh squeezed lime juice
1/3 cup brown sugar
½ tsp ground ginger
3 tsp sriracha sauce
Whisk all the above ingredients together and serve with your freshly prepared salad rolls for dipping.
