<li class="ingredient">3 1/2 tbsp olive oil</li>
<li class="ingredient">8 large asparagus spears, cut into 1 inch pieces</li>
<li class="ingredient">salt and pepper</li>
<li class="ingredient">4 large boneless skinless chicken breast halves</li>
<li class="ingredient">1 tbsp basil</li>
<li class="ingredient">4 slices prosciutto</li>
<li class="ingredient">4 slices parmigiano reggiano cheese (you can substitute your favorite here, I like Kraft shredded Italiano cheese)</li>
<li class="ingredient">1 tbsp balsamic vinegar</li>
<li class="ingredient">Cream Sauce:</li>
<li class="ingredient">2 tbsp olive oil</li>
<li class="ingredient">2 tbsp butter</li>
<li class="ingredient">1/4 onion, minced</li>
<li class="ingredient">2 tbsp balsamic vinegar</li>
<li class="ingredient">1 cup heavy cream</li>
<li class="ingredient">1/2 cup grated parmesan cheese</li>
</ul>

<li class="instruction">Preheat oven to 400.</li>
<li class="instruction">Heat a skillet over medium heat, then add 1 1/2 tbsp olive oil and the asparagus. Season with salt and pepper and saute for 2-4 minutes.</li>
<li class="instruction">Flatten the chicken by placing in a zip loc bag and pounding with a meat mallet. Lay flat on a cutting board.</li>
<li class="instruction">Layer an even amount of prosciutto, basil, cheese and a handful of asparagus on each breast and then roll. Use a toothpick to seal the rolls.</li>
<li class="instruction">Place chicken in a shallow baking dish with just enough water to cover the bottom. Bake uncovered at 400 for 40 minutes.</li>
<li class="instruction">To make the cream sauce, heat olive oil and butter in a pan over medium heat. Stir in the onion and cook until caramelized, about 15 minutes.</li>
<li class="instruction">Stir in the balsamic vinegar and cook for 1 minute before stirring in the cream.</li>
<li class="instruction">Bring to a simmer then remove from heat and stir in the parmesan cheese until melted. Serve over chicken and rice.</li>

<p>When going through my nail polish collection recently, I realized I have a lot of dark colors and very few light spring shades. So, when I received these 6 new shades I was thrilled! I&#8217;ve been wearing them non-stop since which says a lot since up until about 6 weeks ago I rarely wore nail polish on my fingernails (toes are so much easier, no one notices when it&#8217;s time for a re-do!)</p>
<p>My favorite is Kim Konfidential &#8211; the honey tone is great for spring and it looks great with anything I&#8217;m wearing.  I typically do 2 coats of any Nicole by OPI laquer, though these pastel colors are light enough that you could do 3 to be extra efficient. <img src='http://feistyfrugalandfabulous.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>

<p>I&#8217;ve long said that in the warm months, sweaty happy kids smell like puppies.  Or horses.</p>
<p>Not that I&#8217;ve had a lot of experience around horses but for whatever reason that&#8217;s the analogy I&#8217;ve used and when I&#8217;ve shared it with other moms I&#8217;ve received a nod of approval and agreement.</p>
<p>Bath them, scrub behind their ears, and send them off to bed &#8211; but what of the area they&#8217;ve left behind?</p>
<p>Open the windows in the playroom, use a plug-in air freshener to mask the smell a bit, and in my case reach for Lysol Fabric Mist and spray the couches and recliner to help eliminate orders (not just cover them up!)</p>
<p>Lysol Fabric Mist kills 99.9% of bacteria on fabrics, thereby eliminating the cause of the odor (gross, right?)</p>
<p>Use it on couches, curtains, pet-beds, cushions and sports bags to take care of that odor-causing bacteria throughout the house.</p>
<p>Unfortunately I can&#8217;t use it to spray behind the kids ears and into that messy sweaty mop of hair after a day of play.  I guess a bubble bath will still have to take care of my puppies and horses.</p>

<p>If you or someone you know loves spicy heat, they need to pick these up.  For me, they&#8217;re a great way to increase my water intake because I had to drink a lot! <img src='http://feistyfrugalandfabulous.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>
<p>If you haven&#8217;t already checked out the <a href="https://www.facebook.com/DoritosCanada" target="_blank">Doritos Canada Facebook page</a>, like it today and keep up to date on Doritos news.  While there today I learned that all 7-11 stores in Canada will be giving away free samples of another flavor Doritos 3rd Degree Burn chips on May 17th only.  Smart marketing since you&#8217;re likely going to need a giant Slurpee for that flavor too!</p>

<p>In Canada we&#8217;re deprived of the freshest just-picked produce for most of the year so when it&#8217;s literally in our backyards (ok, other backyards, not mine) we really go nuts for it.  I have been guilty of over-buying at the farmer&#8217;s market a number of times because I&#8217;m just so excited and want more, more, more!</p>
<p>I picked up some fresh on-the-vine tomatoes from the grocery store this weekend &#8211; not as fresh as the farmer&#8217;s market would be but fresh enough that my husband commented on how the smell of them reminded him of the garden!  I decided to whip up a quick salsa using other veggies I had in my fridge.</p>
<p>Tomatoes, onions, celery, yellow pepper and jalapeno is all that&#8217;s needed to make a delicious, fresh, salsa for scooping with tortillas or as a topping for <a href="http://lifemadedelicious.ca/recipes" target="_blank">grilling recipes</a>.  I used my handy dandy new <a href="http://order.tupperware.ca/pls/htprod_wwwcan/tup_show_item.show_item_detail?fv_item_category_code=10004&amp;fv_item_number=P10051365000" target="_blank">Tupperware chopper</a> to mix it all up, squeezed in some lime juice, and we were good to go!  Home made salsa typically lasts about 3 days in the fridge before the tomatoes get too watery &#8211; if you can keep it from being gobbled up that long!</p>

			<content:encoded><![CDATA[<p><img class="aligncenter size-full wp-image-17361" title="finish1-300x168" src="http://feistyfrugalandfabulous.com/wp-content/uploads/2012/05/finish1-300x168.png" alt="" width="300" height="168" />Recently, as part of my affiliation with the Finish Revolution blogger program, I was invited to attend a Webnar on how to get the most out of your dishwasher.  Unable to make the date, I was able to view it online later, and made some notes to share with you.  We purchased a new dishwasher about a year ago after the one that was in the house when we moved in went kaput so I know how important it is to ensure it&#8217;s running properly (I did not like the new appliance bill, boo to that!)</p>
<p>Here are a few tips that resonated with me:</p>
<p>1. Don&#8217;t nest your dishes together, because doing so will stop the water from reaching the dishes.  Examples of nesting would be spoons er&#8230;spooning each other or a pot on top of a bowl.  I&#8217;m guilty of this with putting a smaller item underneath a bigger one &#8211; I always figured the water would make it&#8217;s way around to where it needed to be.</p>
<p>2. Hot water is best and most effective in dishwashers.  Dishwashers were made to perform optimally with hot water (makes sense to me, especially when you think about getting those dishes super clean and free of ick and germs.)</p>
<p>3. Here&#8217;s a good one &#8211; don&#8217;t store your detergent under the kitchen sink!  That&#8217;s the second most moist place in your house (aside from the bathroom) and moisture activates the cleaning detergent so by the time it reaches the dishwasher it could be ineffective.  Who knew?!  Our detergent has been in our pantry for a few months now (due to a little 1 year old managing to get into the cupboard under the sink) so I&#8217;m glad we&#8217;re already (though accidentally) on task with this one!</p>
<p>Hope you liked the tips.  Oh here&#8217;s another one you&#8217;ll love &#8212;&gt; pre-rinsing is not necessary if you&#8217;re using a good quality detergent (like Finish Quantum of course!)  Want to try it out?  Here&#8217;s your chance to win your own!</p>

<li class="ingredient">3/4 cup (175 mL) Saputo Mozzarellissima cheese, shredded</li>

<li class="instruction">Cut a slice of approximately 1/2 inch (1 cm) off the top of each tomato. With a small knife, cut the inside of the fleshy part of the tomato (do not cut through the bottom of the tomato). Using a spoon, remove the inside of the tomatoes, leaving about 1 cm of flesh attached to skin. Discard the seeds and juice.</li>
<li class="instruction">Lightly salt the inside of the tomatoes, place them with the open sides downwards, on a plate covered with paper towels.</li>
<li class="instruction">Cut the zucchini lengthwise into 4 slices. Cut the pepper in half and remove the inside. Also cut the half onion in 2. Brush vegetables with olive oil and sprinkle with salt, and cook for 8 to 10 minutes on direct medium heat until they are tender. Remove vegetables from heat. Once cooled, chop the zucchini, onion and pepper into small pieces. Add the mint and a drizzle of olive oil to the vegetables. Mix and season to taste.</li>
<li class="instruction">Stuff the tomatoes with the vegetable mixture and top with the Mozzarellissima. Place on the barbecue over medium indirect heat, until cheese is melted and vegetables are heated through (approximately 5 to 6 minutes).</li>
