Cheddar Biscuits

Ingredients
  • ¼ cup salted butter, cold from the fridge
  • 2 cups all-purpose flour
  • 3 tsp baking powder
  • 2 tbsp sugar
  • ¾ cup milk
  • 1 tbsp lemon juice
  • ⅓ cup shredded cheddar cheese (I didn't really measure this but ⅓ cup seems about right)
Instructions
  1. Preheat oven to 400 F.
  2. Start by adding ¼ cup salted butter to a bowl, no need to get it to room temp first
  3. Add 2 cups all-purpose flour to the bowl, along with 3 tsp baking powder and 2 tbsp sugar.
  4. In a measuring cup, add 1 tbsp lemon juice to ¾ cup milk to sour. Mix and pour over the flour mixture.
  5. Stir the dough mixture until it's not sticking to the sides of the bowl. If needed add a little extra milk if too dry, or some flour if too wet.
  6. Add cheese.
  7. Lightly flour a hard surface and knead the dough about 10 times.
  8. Roll out the dough to about ½" thickness then use a small cup to cut circles in the dough. Re-roll as needed to use up all your dough (this recipe makes about 12 biscuits)
  9. Place on a cookie sheet and bake for 12 minutes. Move to a cooling rack when done.
