In a large pot or Dutch oven, cook beef and onions until browned, drain fat.
Add potatoes, tomato sauce, celery, water, salt, pepper, and hot sauce.
Bring to a boil.
Reduce heat to low and simmer for at least 30 minutes.
Serve with shredded cheese (optional)
Notes
½ tsp of hot sauce may not seem like much, but don't be tempted to add more until you serve. It's a decent amount for the whole family (kids won't find it too spicy) but if you like more kick, add at the table.
