Slow Cooker Vegetable Beef Barley Soup
- 1lb beef stew meat cut into small bite sized pieces
- 1 ¼ cup carrots
- 1 cup diced onion
- ¾ cup celery
- 6 cups water
- ¼ tsp pepper
- 1 tsp parsley
- 1 tsp sugar
- 2 Tbsp beef bouillon powder
- ½ cup pearl barley (I used pot barley, either works!)
- 1 can tomato soup
- Place all ingredients in a 5 quart slow cooker and stir.
- Cover and cook on low for 8-10 hours or on high for 4-5 hours
