Blueberry Muffins

I’ve been watching the prices on blueberries and am thankful that I bought several boxes when they were on sale earlier this summer. With a bounty of blueberries in my freezer, these muffins are a popular request for school lunch from my kids!

Blueberry Muffins
 
Ingredients
  • ¾ cup milk
  • ¼ cup lemon juice
  • 1 egg, lightly beaten
  • ¼ cup vegetable oil
  • 2 cups flour
  • ¾ cup sugar
  • 1 tbsp baking powder
  • ½ tsp cinnamon
  • ½ tsp salt
  • 1 cup blueberries
Instructions
  1. Preheat oven to 375 degrees.
  2. Mix milk and lemon juice.
  3. Add egg and oil.
  4. In a separate bowl, combine the flour, sugar, baking powder, cinnamon and salt.
  5. Gently add the liquid mixture to the dry mixture just until moistened.
  6. Fold in blueberries.
  7. Bake at 375 for 22-24 minutes.
  8. Makes 1 dozen muffins.
